Anyone use a pyrometer on their V710s and can tell me what the ideal temperature is? I know they have a tendency to overheat so a water sprayer is a good idea.

I can't answer your exact question because I've only used a laser temp. gauge and it won't give true core temps.
I can tell you that I've come off course with surface temps in the 155+ range and the tires were def. getting greasy. I would guestimate that you wouldn't want to start a run with the core temp over 120-130.

Mike's temperatures sound about like what I found worked well, when I was able to borrow a pyrometer. Even lower than 120 would be good when starting a run.
The temperature range isn't that far off the Azenis you are used to, and you will need to spray them in the same conditions. The fall-off when hot is a bit more dramatic than the Azenis, and your pressures will be WAY different, probably a lot lower.

I don't know if this applies to a Kumho or not (I suppose it would since the tire is meant for autox) but a Hoosier tire tech told me that you need to measure the temperature of an autox tire just under the surface, only about 1-2 mm deep. Road racing tires on the other hand, should be measured at the cord level.
